Festive Fall Salad Recipe
Thanksgiving is my favorite holiday. It always has been. There is something so special about celebrating a holiday without all of the giving and receiving- to just be present and enjoy the glorious food that comes with it.
I tend to healthify my Thanksgiving plate. I’ve tried cauliflower mash, roasted Brussel sprouts, and delicious baked pears for dessert. I love when Thanksgiving includes options for everyone, which is why this year I decided to create a simple, vegetarian, gluten-free dish to add to the feast.
What I love most about this salad is that it can be used for a number of occasions, not solely Thanksgiving. The vibrant beets and colorful apricots give it that warm and cozy feel that is perfect for a Halloween get-together, November dinner party, or even in addition to a weeknight meal.
The recipe requires no cooking, little dishes, and is over in a few simple steps! Expect to feed roughly 6-8 depending on the type of meal you are serving.
